Blueberry Muffin Cake

Dry Ingredients:
300g all-purpose flour
¾ tsp salt
2 tsp baking powder
→ Mix and set aside.

Wet Ingredients:
240ml whole milk
100g–120g granulated sugar
1 tsp vanilla extract
40ml melted butter
60ml yogurt
60ml vegetable oil
2 eggs (room temperature)
60ml lemon juice
Zest of 1 lemon
→ Whisk together until combined.

Instructions:
Combine mixtures: Gently fold the wet ingredients into the dry ingredients using a spatula (do not overmix).
Add blueberries: Fold in the flour-coated blueberries.
Prepare pans: Pour batter into muffin tins or cake mold, leaving space for expansion.

Toppings:
Scatter extra blueberries on top (reserve a few for garnish).
Sprinkle with coarse sugar.
Optional: Add ½ cup water to the oven tray (for moisture).
Streusel Topping (Optional):
100g granulated sugar
60g flour
56g cold butter (cubed)
→ Rub together with fingers until crumbly, then sprinkle over batter.

Baking:
Preheat oven to 200°C (392°F).
Bake for 20 minutes or until golden and a toothpick comes out clean.
Cool before serving.
