Loaded Pulled Pork Stuffed Potatoes

Ingredients:
3 medium russet potatoes (with skin, washed)
Olive oil
Salt, to taste
8 oz (226g) pulled pork
BBQ sauce (to taste)
Shredded cheese (as desired)
1 tbsp sour cream (or Greek yogurt)
Chopped green onions (for garnish)
Instructions:
Prepare the Potatoes:
1. Pierce the potatoes all over with a fork.
2. Microwave on high power (P100) for 10 minutes, or until tender.
3. Cut each potato in half lengthwise and scoop out some of the flesh (leave about ¼ inch around the edges).
4. Brush the insides with olive oil and sprinkle with salt.

Air Fry the Potato Shells:
Air fry at 400°F (200°C) for 10 minutes until crispy.

Prepare the Pulled Pork:
Mix 8 oz (226g) pulled pork with BBQ sauce until well coated.

Assemble & Melt Cheese:
1. Fill the potato shells with the saucy pulled pork.
2. Top with vshredded cheese.

Air fry again at 400°F (200°C) for 3 minutes, or until the cheese melts.

Garnish & Serve:
1. Add a dollop of sour cream (or yogurt) on top.
2. Sprinkle with chopped green onions.
