Vanilla Ice Cream

Ingredients:
4 large egg yolks
19g light corn syrup
60g granulated sugar
230g heavy cream
154g whole milk
1 vanilla bean (or substitute with vanilla extract)

Instructions:
1. In a small saucepan, whisk together the egg yolks, corn syrup, and sugar until fully combined and the sugar is completely dissolved. Add the heavy cream, milk, and vanilla extract to the saucepan, stirring to mix well.

2. Place the saucepan on the stove over medium heat, stirring constantly with a rubber spatula. Cook until an instant-read thermometer registers 165°F to 175°F (74°C to 79°C).

3. Remove the saucepan from the heat and pour the mixture through a fine-mesh sieve into an empty ice cream container. Place the container in an ice bath to cool. Once cooled, cover with the storage lid and freeze in the refrigerator for 24 hours.

4. Remove the ice cream container from the freezer and take off the lid. Attach the container to the ice cream machine and lock it in place. Select the “Gelato” mode.

5. Wait until the machine finishes working. Enjoy!
